Scott Farms Sweet Potato Pancakes
- 3/4 pound (Half of a Scott Farms Steam-in-Bag) Sweet Potatoes Mashed
- 1 1/2 cups all purpose flour, sifted
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon nutmeg
- 2 eggs, beaten
- 1 1/1 cups milk
- 1/4 cup unsalted butter, melted
Combine flour, baking powder, salt and nutmeg.
In a separate bowl, mix sweet potatoes, eggs, milk and butter.
Blend sweet potato mixture into the flour mixture.
Preheat a greased pan. Pour batter on and cook until golden.
Turn when bubbles begin to form.
