Sweet Potato Bread


  • 1 cup cooked and mashed Scott Farms sweet potatoes, (using steam in bag sweet potatoes, appx 1/2 bag)
  • 1 1/2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 3/4 cups sifted all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/3 cup water
  • 1/2 cup chopped pecans

Preparation Instructions:

Preheat oven to 350 degrees. Combine sugar and oil and beat well. Add eggs and beat. In a separate bowl, combine flour, baking soda, salt, cinnamon and nutmeg. Stir flour mixture and water into egg mixture. Add the sweet potatoes and chopped nuts and stir. Pour batter into greased 9x5 inch loaf pan. Bake for about one hour.
